Basbousa without baking powder
Ingredients

- Sugar: 2 cups
- Water: a cup and a half
- Rose water: a tablespoon
- Lemon juice: a teaspoon
- Coarse semolina: 2 cups
- Coconut: a cup
- Butter: ½ cup (melted)
- Sugar: a third of a cup
- Baking soda: a teaspoon
- Yogurt: a cup (plain)
- Almonds: 1/3 cup (whole / toasted / peeled / for garnish)
How to prepare
- Preheat the oven to 400 degrees Fahrenheit.
- Grease a 9-inch square pan or pie plate with butter and set aside.
- Mix semolina, coconut, sugar, baking soda and butter in a large bowl, using your hands to mix the butter with the other ingredients until well combined.
- Add the yogurt and continue mixing with your hands until completely combined.
- The mixture should be fairly thick and easy to press with your hands (not as fluffy as cake batter or brownies).
- Press the mixture into a square baking dish or a round pie pan, the cake mixture should be about 1 inch thick.
- Cut the basbousa in the shape of diamonds or squares with a butter knife.
- Place almonds or any other type of nut on hand on each pre-cut square.
- Bake in the preheated oven for 30 to 40 minutes, until golden brown.
- While the basbousa is baking, mix all the syrup ingredients and put it in a saucepan until it boils. Let the mixture boil for 10 minutes or until it becomes thick.
- Turn the grill on for 1-2 minutes, until the top is golden, and remove from the oven.
- Cut the basbousa again along the previously cut lines and pour the syrup over it while it is hot until it is completely absorbed.
