Edam potatoes with sauce

 



Ingredients

  • Potatoes: 3 grains (peeled and cubed)
  • Tomato juice: 2 cups (fresh)
  • Tomato: 1 pc (peeled and finely chopped)
  • Onion: 1 piece (chopped)
  • Olive oil: 2 tablespoons
  • Salt: a teaspoon
  • Black pepper: half a teaspoon




How to prepare

  • Heat the oil in a thick saucepan over a medium heat.
  • Add the onions, potatoes, and salt, and stir-fry for 5 minutes, until the onions soften.
  • Add chopped tomatoes and stir for two minutes.
  • Add tomato juice and bring the mixture to a boil.
  • Reduce the heat, cover the pot, and leave for 25 minutes, until the sauce is melted and the potatoes are cooked.
  • Season with black pepper and serve hot.
