Edam potatoes with sauce
Ingredients
- Potatoes: 3 grains (peeled and cubed)
- Tomato juice: 2 cups (fresh)
- Tomato: 1 pc (peeled and finely chopped)
- Onion: 1 piece (chopped)
- Olive oil: 2 tablespoons
- Salt: a teaspoon
- Black pepper: half a teaspoon
How to prepare
- Heat the oil in a thick saucepan over a medium heat.
- Add the onions, potatoes, and salt, and stir-fry for 5 minutes, until the onions soften.
- Add chopped tomatoes and stir for two minutes.
- Add tomato juice and bring the mixture to a boil.
- Reduce the heat, cover the pot, and leave for 25 minutes, until the sauce is melted and the potatoes are cooked.
- Season with black pepper and serve hot.
