Spicy Indian Biryani
Ingredients
- Chicken: chicken (large / whole with bones, cut into 8 parts)
- Rice: 3 cups (white)
- Ghee: a quarter of a cup
- Cloves: 20 tablets
- - Hill: 9 grains
- Bay leaf: 5 leaves
- Onion: 1 piece (chopped)
- Cayenne pepper: 5 grains (chopped)
- Ginger: 2 tablespoons (paste)
- Yogurt: a cup and a half
- - Salt, to taste
- - Black pepper to taste
- Water: 5 cups
- Green coriander: 1 bunch (chopped)
How to prepare
- Soak the rice in a large amount of water, then drain it well.
- Melt the ghee in a saucepan over a medium heat, add the cloves, cardamom, bay leaf and stir, then add the onions and stir for 7 minutes.
- Add cayenne pepper, ginger paste, salt, pepper and yogurt, then add the chicken pieces, stir well, then leave for 25 minutes, stirring every once in a while.
- Add rice, water and coriander, bring to a boil, then reduce the heat, cover and simmer for 20 minutes.
