Spicy Indian Biryani


 



Ingredients

  • Chicken: chicken (large / whole with bones, cut into 8 parts)
  • Rice: 3 cups (white)
  • Ghee: a quarter of a cup
  • Cloves: 20 tablets
  • - Hill: 9 grains
  • Bay leaf: 5 leaves
  • Onion: 1 piece (chopped)
  • Cayenne pepper: 5 grains (chopped)
  • Ginger: 2 tablespoons (paste)
  • Yogurt: a cup and a half
  • - Salt, to taste
  • - Black pepper to taste
  • Water: 5 cups
  • Green coriander: 1 bunch (chopped)




How to prepare

  • Soak the rice in a large amount of water, then drain it well.


  • Melt the ghee in a saucepan over a medium heat, add the cloves, cardamom, bay leaf and stir, then add the onions and stir for 7 minutes.


  • Add cayenne pepper, ginger paste, salt, pepper and yogurt, then add the chicken pieces, stir well, then leave for 25 minutes, stirring every once in a while.


  • Add rice, water and coriander, bring to a boil, then reduce the heat, cover and simmer for 20 minutes.


  • Serve hot.
