Healthy chicken fajita
Ingredients
- Chicken breast: 1 kilo (cut into slices)
- Onions: 2 tablets (sliced)
- Red pepper: 1 piece (sliced)
- Yellow pepper: 1 piece (sliced)
- Corn: ½ cup (canned, washed and drained)
- Mushrooms: 1 cup (fresh and chopped)
- Cooking spray: as needed
- White pepper: a teaspoon
- Red pepper: half a teaspoon
- Cinnamon: half a teaspoon
- Black pepper: a quarter of a teaspoon
- Dried coriander: a quarter of a teaspoon
- Salt: a teaspoon
How to prepare
- Put the chicken strips, onions, red and yellow peppers, corn and mushrooms in a bowl.
- Drizzle with a little oil spray and season with salt, black pepper, red pepper, cinnamon, white pepper, cumin and coriander.
- Stir until well combined, then leave the mixture in the refrigerator for at least 3 hours.
- Place the chicken and vegetable mixture in a skillet over medium heat.
- Stir from time to time until the ingredients are soft.
- Serve hot with pita bread.
