Ingredients

  • Chicken: chicken (cut into 4 pieces)
  • Onion: 1 piece (chopped)
  • Olive oil: as needed
  • Chicken seasoning: as desired
  • Mixed spice: as desired

  • Long-grain rice: 2 cups
  • Maqluba spices: as desired
  • Cinnamon: a teaspoon
  • Noodles: half a cup
  • Vegetable oil: as needed
  • Chicken broth: 3 cubes
  • Potatoes: 2 tablets (sliced ​​and diced)
  • Eggplant: 2 tablets (sliced ​​and diced)
  • Almonds: to taste (fried / for garnish)




How to prepare

  • Put a little olive oil in a saucepan on the stove, then add the onions and stir until the onions turn golden.

  • Add the chicken, salt, brown pepper, chicken seasoning and mixed spice and continue to stir until the chicken becomes white in color.

  • Pour hot water, then add two cubes of chicken broth and a pinch of salt, wait for it to boil, then reduce the gas heat, put the lid on the dish, wait half an hour, then turn off the gas.

  • Soak the rice in hot water for 10 minutes, then rinse it with cold water and drain well.

  • In a flat bowl, pour the rice and mix with it the upside-down spices, brown pepper, salt, chicken broth cube, cinnamon and fried vermicelli, in addition to the eggplant cubes and fried cubes of potatoes.

  • Prepare the upside-down pot by putting a little olive oil at the bottom of the pot, then arranging the fried eggplant in the form of longitudinal slices inside the pot, keeping the sides high, and adding the fried potatoes in slices also to cover the entire bottom of the pot.

  • Add the rice prepared with the mixture little by little so as not to disorganize the bottom of the pot.

  • Add chicken soup to a height of 3 cm from the surface of the rice and put it on the gas without a lid until it boils.

  • When boiling, reduce the heat and cover the pot until the soup disappears from the face.

  • Place the saucepan in a flat bowl filled with water and leave it for 10-15 minutes. Then 10 minutes covered with a towel or bathrobe to warm the rice.

  • Turn the saucepan upside down in the serving bowl and make sure to empty all the contents by turning the saucepan into the bowl by tapping on the bottom of the saucepan.

  • Garnish with fried almonds, add chicken pieces after frying, and serve upside down with yogurt and salad.
