Easy Saudi Meat Kabsa

 



Ingredients

  • Meat: 1 kilo (chopped)
  • Basmati rice: 2 cups
  • Onion: 1 piece (chopped)
  • Garlic: 5 cloves (crushed)
  • Salt, to taste
  • Tomato sauce: a tablespoon
  • Green coriander: ½ tablespoon (chopped)
  • Cumin: a teaspoon
  • Turmeric: a teaspoon
  • Ginger: a teaspoon
  • Fennel: a teaspoon
  • Black pepper: to taste (crushed)
  • Bay leaf: 4 leaves
  • Cardamom: 5 pcs
  • Water: as needed
  • Oil: 2 tablespoons
  • Cloves: 5 pcs
  • Cinnamon: 3 sticks




How to prepare

  •  Put the oil and meat in a saucepan over the heat and stir until the color of the meat cubes changes.


  •  Add the onions and garlic, stirring constantly, until the ingredients wilt.


  • Add tomato sauce, coriander, bay leaf, cloves, fennel, cardamom and cinnamon sticks.


  •  Then flavor it with salt, black pepper, cumin, ginger and turmeric, then cover the ingredients with water.


  •  Stir the ingredients until they overlap, then cover the pot and leave for 45 minutes until they are done.


  •  In a pot of boiling, salted water, put the rice and leave it for 10 minutes.


  •  Remove the pot from the heat, drain the rice from the liquid, keeping it aside, then rinse it with cold water.


  •  Add the rice to the meat pot, then cover the ingredients with the rice water.


  •   Leave the ingredients again on a low heat until the rice is cooked, then serve the kabsa directly on your trip.
