Easy Saudi Meat Kabsa
Ingredients
- Meat: 1 kilo (chopped)
- Basmati rice: 2 cups
- Onion: 1 piece (chopped)
- Garlic: 5 cloves (crushed)
- Salt, to taste
- Tomato sauce: a tablespoon
- Green coriander: ½ tablespoon (chopped)
- Cumin: a teaspoon
- Turmeric: a teaspoon
- Ginger: a teaspoon
- Fennel: a teaspoon
- Black pepper: to taste (crushed)
- Bay leaf: 4 leaves
- Cardamom: 5 pcs
- Water: as needed
- Oil: 2 tablespoons
- Cloves: 5 pcs
- Cinnamon: 3 sticks
How to prepare
- Put the oil and meat in a saucepan over the heat and stir until the color of the meat cubes changes.
- Add the onions and garlic, stirring constantly, until the ingredients wilt.
- Add tomato sauce, coriander, bay leaf, cloves, fennel, cardamom and cinnamon sticks.
- Then flavor it with salt, black pepper, cumin, ginger and turmeric, then cover the ingredients with water.
- Stir the ingredients until they overlap, then cover the pot and leave for 45 minutes until they are done.
- In a pot of boiling, salted water, put the rice and leave it for 10 minutes.
- Remove the pot from the heat, drain the rice from the liquid, keeping it aside, then rinse it with cold water.
- Add the rice to the meat pot, then cover the ingredients with the rice water.
- Leave the ingredients again on a low heat until the rice is cooked, then serve the kabsa directly on your trip.
