Ingredients
Dough Ingredients:
- fine semolina: a cup
- Coarse semolina: 2 cups
- Ghee: as needed (room temperature)
- Fine sugar: half a cup
- instant yeast: 1 teaspoon
- Mastic: half a teaspoon (ground)
- Mahlab: half a teaspoon
- Rose water: a tablespoon
- Blossom water: a tablespoon
Filling Ingredients:
- Pistachio: 3 cups (crushed)
- Honey: half a cup
- Rose water: 2 tablespoons
Cream Ingredients:
- Cream: 350 milliliters (heavy)
- Milk: 350 milliliters
- Corn starch: ½ cup
- Sugar: 2 tablespoons
How to prepare
- 1 - In a bowl, put fine semolina, coarse semolina, sugar and mahlab, and stir the ingredients until they overlap.
- Add a cup of ghee, and rub the mixture with your hands until it becomes sticky.
- Cover the bowl with cling film, and let the mixture rest at room temperature for 15 minutes.
- Add yeast, mastic, rose water and blossom water, and rub the mixture with your hands until it sticks.
- Cover the bowl again with cling film and let the mixture rest at room temperature for 15 minutes.
- Preheat the oven to 200°C, and grease an oven tray with a little ghee.
- To prepare the filling: In a bowl, put the crushed pistachios, honey and rose water, and mix the ingredients until they overlap.
- To prepare the cream: Bring a saucepan, add the cream, milk, starch and sugar, and mix well.
- Put the pot on the stove over a medium heat, and continue to stir the ingredients until they thicken.
- Spread a sheet of nylon on the work surface, divide the dough into two parts, and place a section of the dough on the nylon paper.
- Roll out the dough with a rolling pin until it becomes a rectangle and fits in the oven tray.
- Repeat the previous step to form the second section of dough.
- Carefully turn a portion of the dough onto the baking tray and carefully remove the cling film.
- Spread the filling of pistachio and cream over the dough layer, flip the second part of the dough over it and carefully remove the cling film.
- Put the tray in the oven for 20-25 minutes, until the color of the face becomes golden.
- Remove the tray from the oven, cut the maamoul and serve.
