Fruity rice pudding

 



Ingredients

  • Short-grain rice: 1/3 cup
  • Milk: 2 cups (low fat)
  • Honey: a tablespoon
  • Orange peel: 1 teaspoon (grated)
  • Dried apricots: ¼ cup (chopped)
  • Raisins: a quarter of a cup
  • Nutmeg: a pinch




How to prepare

  • Preheat the oven to 160°C.


  • In a medium bowl, mix all ingredients except nutmeg.


  • Transfer the mixture to an oven tray or heat bottle cups.


  • Sprinkle the nutmeg on top and bake for an hour until the rice has absorbed most of the liquid.


Serve hot or cold.
